About the Crew

TOMMY
Tommy has enjoyed being on boats for the last 19 years both for pleasure and then professionally since 2010.
Power, sail and motor, Tommy has a wealth of knowledge and has spent 8 years full time teaching yachting throughout his career.
With Emma, he has worked from 2015-2018 and now back since March 2022 offering luxurious catamaran charters in the BVI, Bahamas and St Maarten.
With a long list of delicious cocktails up his sleeve, a passion for watersports and a great knowledge of the Caribbean, Tommy will ensure you the best time aboard whilst staying safe, comfortable and relaxed.



EMMA
Emma grew up sailing in England, on her father's yacht. She sailed all around the Southwest Coast of England and has always loved being in and around water from a very young age.
Her career started in the hospitality industry, working in bars and restaurants as a server and a sous chef during the holidays, between studying for her degree in Education and Art. She then took a Gap year and worked as a Ski Chalet Hostess in the French Alps.
Emma has a real passion for cooking which started from a young age. She has taken a number of courses at Ashburton Cookery School and most recently in 2022 she enrolled in the specialist Yacht Chef Course. During her travels she has also taken cooking classes in places such as Thailand and Bali, where she enjoyed shopping for fresh local ingredients in the market and producing authentic Thai and Balinese cuisine.
Emma first came out to the BVIs in 2013 to learn to scuba dive and she fell in love with the islands, the people and the way of life. Emma has been working on charter yachts since 2014.
When Emma is out of the galley she enjoys teaching scuba diving, taking guests snorkelling and sharing her knowledge of the marine life and the local area. She is currently learning to wing foil.

Below is the email I just sent to the crew of the Olivia Charles which I think says it all.
We have been doing crewed yacht charters for over 30 years, and they are the best crew we have ever had. (we sailed with them in Grenadines in 2024 with a similar experience.) The boat was very spacious and comfortable, in pristine condition and the service was impeccable. We would sail with this crew any time.

On behalf of our group, I wanted to tell you how special you made our week in the BVI. We felt we were in a world class restaurant and hotel for 7 days! We have had some funny texts between the group since we left complaining of “ having to mix my own drink” or “ having to make my bed”.

The food was exquisite in diversity, quality, flavor and presentation…a Michelin star performance by the chef! We also enjoyed both of your company and hospitality. Tommy, your attention to detail and everyone’s comfort and safety was greatly appreciated. Our deepest thanks to you for giving us a wonderful week of vacation.

To sail in the BVI has been my dream trip and this week exceeded all of my expectations largely due to
you, Tommy and Emma! You have treated us like family and catered to our every whim (and there were lots!). The two of you work together like poetry. Your mastery of the boat made us feel safe at all times. You maintain the boat as if it were your child. It is beautiful and clean and inviting and comfortable. Tommy’s endless cocktails were a delight and what can we say about the food??!! Emma, we truly do not know how you can whip up such wonderful, creative, delicious and beautiful dishes, day after day in the tiny galley! ……..5 star every meal!.
The endless beautiful sights and activities have created lifelong memories for us all. We truly feel blessed to have had the great fortune to spend a week with you in the BVI! God willing, we will meet up with you again. Please look us up if you ever get to Atlanta!

Emma and Tommy,
Another year where our family is fortunate enough to spend a week with you both aboard the Olivia Charles. This week in the BVI has exceeded our expectations. The food, the sharing of boating and local island knowledge, the sailing and motoring about along with your absolutely wonderful company has been nothing short of amazing.

As I write this I’m sitting on the bow, looking out over Little Harbour. It’s Bea out, the sky is clear blue as is the water, and I’m listening to the waves lap against the shore. Thank you for giving us all these moments, along with the adventures of hiking, snorkelling, swimming and kneeboarding! Until next March these memories will serve us well. Such a perfect week! A little rain made it all more fun and adventurous. Emma I don’t know how you create such meals that should be winning awards instead of disappearing as fast as we can consume every bite. Tommy, I don’t even drink and I had the very best cocktails ever! Annie and Patty kept you busy, but you kept them happy as I’ve ever seen them! The picnic was so fun. January 2025 Ladies Charter

There are not adequate words to express how much we enjoyed this truly magical experience and how grateful we are to the two of you. The entire week was perfection- from. Tommy's fun drinks and exceptional sailing to Emma's out-of-this world food and consummate professionalism and kindness. We have laughed (and laughed until we cried), and on and on. None of us will EVER forget this trip, and we are going home begrudgingly.......but with memories that will last a lifetime. Thanks so much for an amazing week! Your kindness and care for us was always evident in every delicious meal, drink and time spent together whilst sailing and relaxing bays and anchorages. We truly enjoyed ourselves and feel rejuvenated as we return back to work and to some of our normal routines. It’s fair to say we have been blown away by this week spent on the Olivia Charles sailing the Windward islands with you both. From the moment we met you, we knew we were in good hands and Tommy and Emma delivered exceptional service from the start.
